I use coinbase but I'm 100% sure after 1 confirmation the transfer is unbreakable and its just coinbase confirming its received it and the transfer being noted down or whatever

It's not always 1-7 minutes. There can be huge bitcoin transaction delays, one time I remember being 12 hours

Yes, due to huge delays, I mostly keep it morning since night time people send quite a lot for drugs... increasing the delay time, but also you can pay a bit more to speed up the transaction.
