You can buy anything that is <= your current gold amount. And your gold will stay the same, so you can't actually increase it, but you can keep it the same and buy items. I have yet to find a way to genuinely edit it, which as you said, is most likely server-sided.

Just tested the gold, it's purely aesthetic. It doesn't keep your gold the same to continue purchasing.
