well for me i like them both heres my main reason,

toobing: i love toobing in wierd places or distances like from one map to the other and getting legit kills makes the boring mw2 interesting...

as for ninja knife this is fun when you get behind the whole team and knife them from behind and they wont know kinda relates to as if your stealth and no-one knows where you are...so they camp and shit themselves hahahah

but if i had to choose 1 it would be toobing cause ppl toob on HC SnD....which is just plain noob

It is possible to prevent being knifed - as example SitRep perk, you will hear knifer from miles since they all use Commando..
What i can't say about tubers. It's almost impossible to protect your self.

You can neither dodge commando if he's infront of you.

But what if the knife-runner uses ninja?

Footsteps will be reduced to 1/4 and even if you use sitrep, the volume stays at 1/4

Well, if the knifer is using ninja, he wont be able to stab everyone in like 10meters. What im trying to say is, if you notice him you can shoot his ass

Knifing can turn out pretty fun for the knifer, what again i can't say about tubing. Tubing is sooo boring
