The HTML tag is used to display raw HTML, it doesn't actually do anything. As for the youtube video, don't insert the whole URL, only the ID.
I'm trying to add some HTML and a youtube vid to my signature, but the actual HTML code is showing when I save it, and the Youtube box is white with no video.
What I'm typing in:
Replace the { and }'s with [ and ]Code:{YOUTUBE}https://www.youtube.com/watch?v=2XcCgyj49bQ&feature=related{/YOUTUBE}
Oh and about the HTML, does someone have a list of tags that aren't allowed in a forum?

No html markup is allowed, only BBcode.
How the youtube tag works:
[YOUTUBE]8F6EoMdn95E[/YOUTUBE]
For:
[YOUTUBE]8F6EoMdn95E[/YOUTUBE]
or
[YOUTUBE=8F6EoMdn95E]Some random name here[/YOUTUBE]
For:
[YOUTUBE=8F6EoMdn95E]Some random name here[/YOUTUBE]
Alternatively just copy the video URL in your sig and save (don't preview first) to get the small version some people have
