How can u not fly the heli ? its the easiest thing in the game. I suggest u go into your options and invert your mouse for the heli that is probably why u have trouble flying it.

I play battlefiel since bad company and still dont know how to fly! eheheh

that mission was actually the way I learned to fly, I was shit but got it down pat pretty quick so Just keep persevering and get better at it bro, in multilayer you get shot down instantly if you're just learning so I reckon thats the best way
