I also Photoshop, plan to video edit sometime when I'm not too lazy to learn. I also tend to have too many tabs open in Chrome. But, to be honest, I don't need 16GB of RAM. I can always make a RAM disk.

Running photoshop and a game at the same time wouldn't use more than 8GB.
Video editting only when you're rendering some high quality shit.
