760 will offer you a lot of longevity. Try to go for that I reckon. Also Palit is a good budget brand, I have their gtx 680 and it's been going swell, but I'd wait for the EVGA ACX to be restocked. EVGA are my favourite, and their support and warranty is the best in the business.

I'd personally go with a Dual 7790 setup.
It'd have about 25% more power over a single 760.

I don't think longevity would be an issue as GPU technology is progressing incredibly quickly, and you would probably upgrade within the next year or two anyway.

I say definitely go for 27" 1440p IPS monitor. You will not regret it. Looks soo good.
