Corsair is a reliable brand, i dont know what @The amazing is on about.
Crossfire means that you have 2 AMD GPUs running at the same time. Sli means that you have 2 Nvidia GPUs running at the same time.
600 watts should be plenty for you right now, if you plan on adding another GPU you might as well upgrade your power supply, it will save you the trouble of having to buy a new one later on.

If you have good enough cooling, absolutely. You can always go for an all-in-one liquid cooling system for $50-150.
