I know goku's history of always breaking limits, becoming stronger than his enemy . That's what dragon ball is about . This time I'm not too sure if he will surpass jiren.

I bet anyone (bitcoin only no chargeback ******) that gokus new transformation will not be able to beat jiren single handedly.

Out the blue one episode had Goku going Super Sayian GOD, but outside of that single ep he was only going SSB at most.

I only started watching DBS at the start of this universe arc. I'm watching it from the begging in dub, so maybe I'm just missing a piece of story where goku is able to go SS god at will but chooses not to.

It has to do with stamina and Gokus personality. He will pick his form according to his opponents power. He won't go SSB on some pleb that doesn't even require SSJ2. He'll play with them at SSJ1 and learn what they have to offer. After they've reached max and Gokus learned everything he needs to learn from them, he overwhelms them with the next form. That's why Goku is better than Vegeta. Goku wants to LEARN from his enemies. Vegeta just wants to DESTROY them.

See you'd think that right, but it's been stated in the anime that SSGod is much less demanding (In fact, in the manga Vegeta had mastery over both forms and he demonstrates switching to SSGod mid battle because it puts less strain on his body, and then back to Blue when he is attacking.) Although Toriyama has contradicted himself about 4x to date, as originally he claimed the Red form to be stronger but now it's confirmed the blue is
