Honestly, I'm not a biggie when it comes down to japanese cartoons, but I must admit I've enjoyed watching some Hokuto no Ken (Fist of the North Star). Normies these days don't get it, however I must reassure if you are looking for some mature anime, this one should be among the ones in your top list. It's got the feels, and the story develops pretty well as for a series from the 80s. Underrated in comparison to the modern copypaste-everything-kind-of-cartoons coming out from Asia.

Log horizon and Air gear are 2 that i liked and would like to see a continuation of but i kinda doubt thats gonna happen.

A more recent one which i hope gets more seasons is Overlord which had not long ago a third season added and i hope for more.
