    It actually hasn't, it's been extensively repaired and rebuilt dozens of times. Half the building before this fire wasn't even original, especially the spire which was completely replaced in the 1800's.

    In the french revolution of 1793 the church was rededicated multiple times without artifacts plundered and destroyed.
    28 statues of biblical kings were destroyed at this time.
    All other large statues destroyed.
    The entire cathedral become a food warehouse.
    In 1801 Napoleon re-instated the building as a Church.
    The church was half-ruined and heavily damaged through the 1800's.
    The Hunchback of Notre Dame novel was very successful in 1831.
    In 1844 King Louis Phillipe ordered the church to be restored which took 25 years of construction to even complete.
    Although the architects tried to remain faithful to the original design they took liberties in many aspects.
    The church spire was totally remade and even taller than before.
    Statues remade.
    19th and 20th century the exterior was heavily damaged by air pollution and eroded much of the stonework.
    By the 1980's several statues and gargoyles had rotted and fallen off entirely.
    Starting in 1991 a complete restoration of the exterior began, and took a decade to complete.
    The 18th century bells (which were the 3rd set of bells already) were melted down and recast in 2013.
    Even after the 1990's restoration the building was severely deteriorating, and in the early 2010's a new restoration was planned.
    The plan was going to cost 100M euros.
    In late 2018 renovations of the spire began to fix its structural problems.
    During this renovation is when the fire started.

    Essentially the building has fallen apart and be completely fixed over and over and over. At this point it's a ship of theseus and claiming that it stood on its own for 800 years isn't even fully correct. It's had constant and continuous upkeep for 800 years, and an accident finally did it in.

    Even though they've raised a load of cash to rebuild it'll never be the same, no one can build like that anymore, the skills died out with the introduction of health and safety in the workplace lol.
