Just watch the recommended of the season! lots of nice new stuff every seasons. then when you get familiar, go back in time and watch some classics!

Recommendation is Death Note.
From there search via Google (or Bing) top short anime series and see a few sites listing a list with a short description. If you like the description/synopsis, watch it.
