As a general rule, I use 2GB in RAM per cow and leave 4GB for OS operations. I'd say a stable 6 cows.

He has a 4.2Ghz Quad core. WTF are you on about. that's awesome... My farm comps is a 3.2Ghz quad core and I can open up to 24+ cows (Never gone higher cos of the time it takes to create clones)
