I usually do 3 sets of 25 for pushups, and 3 sets of 50 for situps. Though that's a bit extreme for beginners.
I'd suggest 3x10, and 3x25.

Depends what you wanna do. Stay lean, gain minimal muscle or gain max muscle. You want focus on cardio and endurance or focus on burst strength, or do a bit of everything. Only a few guys on here actually workout. It would be like asking bodybuilding.com what kind of mascara you should use.
