It looks like boxing sooo

Hajime no Ippo, Holyland, Girls the Wild, Buyuden, Katsu, RRR, and Ajin has somewhat boxing fights but doesn't revolve around it.

Generally Muay Thai isn't a good technique for manga. It's a bit too efficient and doesn't have anything that is exceptionally showy.

The only series I remember with Muay Thai being important is....Karate Minoru, Baki(?), and Tough.

Battle Angel Alita is actually a good series that incorporates non-traditional thai as well, but I'm not sure if it's actually called that.
