So I got a civil letter from Walmart asking for 500$ or they will sue me and raise it to 900$.. I jammed a $5 item which they got back after, so do you think I should pay them or they will sue me??

Eh, you should probably contact a trusthworthy lawyer and talk that through.
I mean why would they ask $500 for a $5 item. If you took it and stole it you did commite a crime but it is not totally on them to punish you.
