Watercooling is definitely an overkill/not needed with this build.
Hyper Evo 212 should suffice.

Er, close, but no. For simplicity it works in a sense like that, but the second card never performs at 100%. Any time you go SLI/Xfire you are only upping performance by around 50-75% depending on the card. And usually its better to get one powerful card than 2 lower end cards, especially given AMD's scaling issues are still prevalent.
You are pretty much right, but to say that 2 cards = 2x performance is not truly correct. If price is not the issue, its usually best to go for the single card than having 2 due to all of the extra issues that SLI/XF can bring. Including in some cases negative performance.

Try switching things around a bit and try to fit a 770 or a 780 in the build. 7970 works too. The X60 series of NVIDIA cards have always been for low-medium range only
