What if you changed the server packet to give a item and also change the incoming client packet to give you the item? Would it give you the item or no? I'm just wondering so don't troll please.

Wouldn't work.
The server decides if the players inventory changes and then just lets the client know to keep them in sync.
For example, when picking up an item, the client says to the server "yo I want to pick up the item right here", then the server decides it's possible and tells the client that it's inventory has changed with the new item, and also says the ground has changed and the bag is no longer there.
