So, I'm wondering, what language should I start in for coding ESP and such? I've got minimal experience in Java, and know a small bit in LUA, but I've yet to see a Java/LUA based game hack. If anyone could point me in the right direction, that would be great! Thanks in advance!

You are going to want to start with DirectX. Basicly every new game uses it.

Don't learn to "make hacks" you're going to hate it, be extremely confused, and just give up after a day of trying. It's extremely overwhelming to anyone who doesn't already have strong backgrounds in programming and such. Learn a programming language like Python or C# or Java, then once you've learned one language and can write moderately complex programs with complete confidence, learn another language. Once you're finally competent in your language of choice and completely understand how programs work start looking into frameworks that wrap the idea of graphics and video game programming like DirectX. From that point you'll have an understanding of the ins and outs of how video games come together and you can begin to learn how to tear them apart and reverse engineer them. That is the point that you can start learning to "code hacks."
Learn to write code before you try and do extremely advanced ideas.
Good luck, don't get yourself too overwhelmed and start slow.
