Is there any way you can be VAC Banned for hacking in Zombies Solo?

On steam, yes. However, there are chances that you might get lucky, I cheated once using CE and after that I stop using it, I never got banned and I have 1,000 hours of gameplay. But this does not mean that it is 100% undetected, you could still get banned anytime.
