Because AR stands for Armalite, not assault rifle.

Technically the original rifle would be the Armalite-10 and later, the Armalite-15, a more compact version firing a lower caliber projectile than the AR10.

Bolt action and single shot are different, I can have a bolt action that is clip fed or a single shot rifle that uses a bolt. However you may find a break-open single shot rifle, just like shotguns.

My next thought would be a break-barrel or even a lever action.

Lever actions aren't single shots.

Lever actions feed from a tube, those red rider BB guns work the same way the real lever actions do, I'm yet to see a lever action single shot, unless we're talking about cosmetics.

edit: Did a quick google search, like I thought, the only real lever action single shots are black powder, which may be the case.

Well I'm not a dude who knows everything about guns, as I'm not interested in them. But... It works like this:
You pull the gun to open the ammunition box or w/e. You put a bullet inside, you close the "box". You pull something to make the bullet ready up and then you can shoot.

Not sure If you will understand what I just said, but whatever.
