I have the 2gb version, runs pretty quite I guess.
Also haven't had any issues at all with the card

Yeah I really don't think the 4gb version is worth.
If you're running more than one monitor and have the money then by all means go for it.
Other than that, the 2gb one is more than sufficient.

it depends well 2gb is also fine for gaming and for official works
and for games it will handle upto mid high settings i think but 4gb is best as it can handle games nicely at high settings and it will suit your 8gb ram too.
my neighbor has a good pc of 8gb ram, 4gb gpu,i7 processor and his pc runs like beast it handles any game with high settings so i suggest you 4gb if u can affor
otherwise 2gb is also good if you arent that gamer from heart and you only need for official works like photo editing , programming etc.
both of the gpu's are good.
and lastly i i will tell that
go for the 2gb as in todays era 2gb gpu is more than enough.
but after like 2015 and 2016 that time 4gb gpu will be a requirement.
for now 2gb is fine
You won't need the 4Gb version.
You won't run games on two screens. The only reason to have that much vram with current games is if you run three screens. And if you ran three screens you would require atleast two cards to be able to crank up the settings to a level where they use that much vram.
