Two of the new splash texts are;
"Should not be played while driving"
"You're going too fast!"
That is actually funny of them to add. lol
Let's not forget about the Lamas.
Also they have changed the entity IDs, which will break so many plugins depending on those IDs, requiring 1.11 to have separate versions of each plugin.
Oh and the NBT tags.. nice fdp
Messages can now be 256 characters long instead of 100.
