I HIGHLY recommend that you go through guidedhacking's beginner guide to game hacking, it goes through using cheat engine and basic c++ hacks although the cheat engine part which comes first is enough to achieve your current goal.

Start with an initial unknown value then jump on your mount then scan for changed value. Jump off of it and scan again for changed value. Repeat. You will see a value that is encrypted. I believe the function that has the offset you need to encrypt values has been posted.
