What's the difference between stainless steel and carbon steel?

Of these 3 what would be the strongest:
Stainless Steel (Buck 119)
Rainbow Titanium (Throwing knives, have 3)
Carbon Steel (Tac-Force)

I currently have these 3, don't know which one is the best.

ADD ON: Might as well also ask how many times I can fire a 20 inch carbon crossbow bolt from a crossbow before it breaks (if shooting animals, wood, rocks, etc.)

Stainless Steel: I've broken it before, so I don't think that is the strongest.
Rainbow Titanium: I have no idea what that is, but titanium is pretty strong.
Carbon Steel: is strong. Not the strongest but compared to others, I believe Carbon Steel is your strongest knife.

Stainless: no water spots show up or rust for a while.
Not sure about Carbon Steel, maybe it is just regular steel.

High carbon is stronger, stainless is more for aesthetics though I do have some decent grade stainless in my collection.
High carbon will hold it's edge longer too.

edit: Forgot to comment about the titanium. High carbon is still a better blade but titanium for throwing knives probably isn't a bad deal.
It isn't a steel really made to hone into a perfectly sharp blade, and throwing knives aren't designed for that either way so.

Once i get back to my other house i'll show you my three knives.

But i'm pretty sure the tac-force.

Depends on what the company's actual definition of Carbon Steel is. Basically any steel without a readily defined alloy mix can be considered carbon, while stainless is standard steel mixed with chromium. I usually go for Carbon Steel as it holds an edge better and is easier to sharpen.

What's the Model? Serial Number would be helpful as well.

I was just watching a video on youtube on how to make a sword and he used high carbon steel.

As @Ethereal said, and in my personal experience I have found Carbon to hold a sharper blade for an extended period of time in comparison to Titanium or Stainless. Much lower oxidization chance as well, fuck rust.

I have a few Tac-Force blades, they aren't bad price wise but there are a few companies out there in their pricing area that I prefer.

Might want to give Cold Steel or Frost Cutlery a try.
They are about as cheap as I go and I usually don't get anything serious from them.
Mainly just tactical fold outs because I collect them.

If you're looking for mid to nice blades for the money I suggest investing in Kershaw, SOG, KA-BAR and Blackhawk
I have quite a few blades from each of them, got a sick tactical hawk from SOG that I've had for a few years, been on tons of camping trips with it
not a single chip in the edge yet.

I've bought a trench axe from Cold Steel once, plan on getting a 24-inch machete too. It looked nice compared to Frost Cutlery. Also bought some knives from Gerber that were alright.

Never mind, looked at the actual blade. It says 440 stainless steel. But the description said it was carbon steel and stainless steel.

you can shoot that arrow at animals a good 20-30 times, the wood less.
