There's a lot of tutorials on YouTube, just don't click any 'download links'.

I suggest learning how to actually use Cheat Engine first. After you use the tutorial that comes with it, it's quite simply to know what you want to do and how to do it.

Just remember, Cheat Engine only works in Single Player for, idk, giving you 9001 hearts and stuff. It doesn't work in Mutliplayer, otherwise people would be using it like crazy.

Minecraft having an anticheat has nothing to do with cheatengine. Cheat Engine modifies what the client thinks is true, so you can tell if that you have id 4 instead of id 3 in your fifth slot in-game. Vanilla multiplayer servers don't have an anticheat, but you still can't use cheatengine on them.
