You'll never be able to change the number of your items, because there is just no such number in the memory, the way they store information about your items is slot : id, not id : amount, thats why you need to find these freaking groups of addresses to change items.
Update: you can actually hack the amount of items, but you'll need to decrypt save files, which is tough thing and I guess noone has done it yet.

Unequip item, search for 608 (8 byte) whitch is empty slot, equip something, search increased value, then you'll see addresses that has 27*** values. It's your slot address. Then just equip anything you want too see its id.
