I think you should read up on
what a packet is.
They're not this unstoppable technique that lets you do anything in the game and that hacks the servers of AE, as I know some who have no idea what a packet is would first have the impression of when seeing it in action.
If i wanted to simplify they're basically how your computer and the AE servers communicate. Instead of words they send these packets of data that when received the recipient "unpacks" all the data to make it do what it was sent to do.
As far as I'm aware the packets you get when you run a packet sniffer on something like Grimoire is essentially the packet associated with input you manually send to the game (manual input refers to you moving and clicking the mouse to do an action such as loading a map or moving your character or equipping an item [and the list goes on]) or packets automatically sent to the game when an action is done like loading a map.
If for example you send an item to the bank from your inventory while using a packet sniffer you will receive a packet. That packet is essentially the packet being sent from your computer to the AE server to say "Hey, send item called 'Necrotic Sword of Doom' to the bank" (if I were to translate what actually happens into an English equivalent).
So if you get your hands on the packet for that and you put it in a packet spammer and spam it, your computer is basically spamming the server to say "Hey, send item called 'Necrotic Sword of Doom' to the bank" over and over again. You could do the same thing for a quest or attacking a monster or using a skill. But the key thing is that it is all input that you are sending to the game.
This is useful for automatically doing commands in the game without you having to manually give the input, skipping manual input that make something tedious, and spamming input faster than one could conceivably do manually (which is used
here).
You can't send ANY input to the game in any fashion to say "hey, give me more Acs" so you won't find a packet to do so.

Also note that some packets and quests are rigged to ban you when you send them so you should have some caution when spamming packets other people tell you to do.
