Changing FullProfile

So with the save injector you can either use a preset unlock all profile or manually change your own. Since the easier method of identifying and changing these values is now outdated, I look for a different one. The best i could find was using a website called save edit online. Now I am kind of a beginner to these things and is there any other better method the manually changing values? If not could someone give me a basic rundown of changing values using this website/ just changing values in a .txt doc, like how to change addon values, or offerings, or give p3 for characters.

(also Im pretty sure this isnt possible but can you unlock all characters using the save injector and if so how would you go about manually changing the full profile to unlock them, once again pretty sure this inst possible but its worth asking.)
