I want to know how to edit them packets.
What program should i use for this, how i would go about making myself an admin or changing my gamemode on a multiplayer server. I couldn't figure it out with the zero knowledge of packets i have now, and google didn't help at all.

Im 99% sure you can't edit those things with any type of editors. Well atleast not a bukkit server, sorry.
No you can't do that, plus most servers are bukkit servers so your outta luck.
