Is this possible without the need of people joining and then leaving and what not?

No, you need to begin with at least 3 players. 
The best thing u got a MC or a 2 computers more u join and happy play

^ Yeah, pretty much you need to make new accounts. I've been thinking that it'd be good if Z8 implements a solo system, but I don't think it's going to happen.
