for me, the most bloody animes will be:
-Hellsing
-Elfen lied
-Gantz
-Chobits (lol kidding again XD)

without an specific order ^^

im surprised nobody put battle royal or ichii the killer. both very bloody and very dark-(both are live action and manga so i assume its been made into an anime although i never really seen either in that format 0.o)
the one that i know for sure is anime is gantz. elfen lied and bleach or whatever pails in comparison)

rofl, people keep mentioning gantz, but rly it wasn't that gory.
Although hellsing, berserk, and battle royal are all made by the same manga company (dark horse)

Hellsing OVA tops gantz completely in my opinion.(epic battle scene with alucard and london)
