Finding addresses cheat engine help.

I'm a bit interested in making simple hack, for beginning, and i'm interested how can i find address that DOESN'T SHOWS VALUE???
Like example, red health bar in GTA SA, how am i supposed to find adress/es for that heath bar???
It was just an example question...
