You can easly get 5-6 cows running with full FPS... 8 with a bit of FPS lag...
6 cows, i5's are famous for not handling VMware load though =/

Well the most Cross Fire's you can actully run is one, unless you are getting a 3rd party program involved.
OT:
You could support 5 cows with no lag ~@2GB each. It's also the fastest with ready up times and 30 seconds slower than 8 cows in the long run (or around that). Do not be an idiot and run 8 cows that thing will end up burning like my friends old PC.
Also i'd like to remind you, theres a chance you could get banned since using "VMware" is against Cross Fire's terms of service.

And ignore other people, with roughly 20-25 fps per cow i ran 5 cows on 8GB of ram, quad core i7, 2gb nvidia.
I reckon you could run 6 with NO lag or smoothly to a degree, but you co uld probably max it out at 8 with lag on each cow.
