What OP wants is a client that has no modifications besides the cheats. I have one in progress with a default main menu and a simple gui in-game which is completely toggleable. So with a press of a button everything looks like vanilla Minecraft.
I'm not sure if I'll want to release my client though. It was supposed to be a private client but its getting pretty good so far
