The reason why that dude said to get 2 4gb sticks instead of 1 8gb stick, is because you can run the 2 4gb's in Dual Channel mode which is supported by most motherboards these days and provides heaps better performance.
The b75 is for business, yes. However the person that told you to get H61 is totally wrong because H61 has less features and isn't even supported by your CPU.
(H61 is made for the home user, however optimized for 2nd generation Intel i7's only, Your CPU is a 3rd generation Intel i7 and therefore you would want a H77 chipset compatible motherboard which would support your 3rd generation i7!)
B / Q series = Business
H series = Home user
Z series = Extreme user, mostly has all the features you'll need.
It's REALLY hard to find LGA 1155 motherboards these days but i'll recommend this board for you because it's the best bang for your buck option and also Z77 so it's got all the bells and whistles.
Other than that, you're fine. A 500w PSU is fine for a single 750ti.
Just make sure your PSU isn't some generic chinese crap because there a lot of PSU's out there that are unbranded and rate themselves at 500watts and above, then you push them past 250 watts and they explode on you. EVGA is a great brand though so you'll be right.
The 750ti should be able to play games on medium settings at 1080p if that's what you're looking for.

Sadly already built it up now. I figured out about the dual channel somewhere else a while after, I forgot where. But thanks for answering that. I have to get another stick of RAM now.
I can run games at about 40 FPS on Ultra right now. I'm not crazy for looking at high FPS rates so this is good for me.
As for the motherboard, I'll aim for selling my current one and replacing everything with the one you suggested.

I'm in the process of building another system for myself at the moment, just not sure weather I should give in to temptation and go for the top of the line processor or not.

For longer lasting it would be worth it to go for top of the line now instead of wanting to or needing to later on. It'll just be double the cost

As a fellow computer builder, I always tell people who ask about building budget computers to buy a good CORE system now with a really cheap 30$ graphics card and buy a decent one later on so in the end you really feel that you could have built you're computer better.
It's hard the first couple of weeks/months waiting to save up for that killer GPU, but in the end if you're patient it's deff worth it

I recently bought 2GB Videocard, it suggest you would buy a 4GB one because games like Assasins Creed Unity and Far Cry loves VRAM.
