I have seen someone with over 500 hours in the past two weeks on csgo was wondering if anyone knows how they do this.

There are idle programs that tricks steam to thinking you are running the game when you are not. SAM (Steam Achievement Manager) is one of them. Directly editing the hours is kinda risky as you will never know what can happen.
