That's just the way our bodies work and have evolved. Oxygen is a necessity for our red blood cells whilst Carbon Dioxide will be the waste/byproduct
Plants make us Oxygen, we inhale it, we exhale carbon dioxide, plants take in our carbon dioxide .
It's just how our world has developed .

The reason we humans and animals breathe oxygen is because all the plants release oxygen, and take our CO2.
If plants had to take in oxygen and release CO2 from the start, then we would be breathing in CO2 and releasing oxygen.

Thousands of years ago they used to be used for the digestive system because the earlier people used to eat shit that was hard as hell to digest, but as we got smarter and were able to make and harvest healthier food for our bodies we had less and less of a need for the appendix to digest easy foods like fruits and bread and junkfood and shit.
