Unless you know how to edit uasset code that's compressed, it's impossible to accomplish something like this.

So you started asking if you could Disable your HUD on the main menu, and have no idea what the fuck your talking about, then you go along asking if you can disable grass and shadows?? make up your mind dude ffs.

Yes it's possible but as @webgamezd said, unless you know how to edit .uasset files, it's impossible.
