I never quite understood why Minecraft is so popular. It bores me amazingly and I do not really find it fun.

Servers that have a custom metagame.

I.E. wars/pvp/economy/towns/mmocraft/etc.

building new things makes it fun.

It's open world setting with no clear goal, where you can build and do basically anything the game allows, which happens to be a lot. Not really surprised it attracts such a wide audience.
