How to use Gibbed Save Editor!

I'm having a problem with my weapon's stats lowering to their base value. I'll add extra barrels to guns to get my desired effect. Whenever I pull them out of the bank in-game, they work perfectly- but then, whenever I put them back into the bank, exit the bank menu, then re-enter the bank menu, all of the extra stats are gone. I don't understand why this happen. They don't disappear out of the game, it's just that the extra barrels I add disappear whenever they go back into the bank. How does this happen- better yet, how do I fix it? Can it even be fixed?

Thx for the vid. I'm wondering how to start the game afresh, but with, say, a level 12 character and have the game level / weapons (such as the vengeful infinity) also be at 12.
