But you see, we have the current technology to know when animals are infected. Also, most animals nowadays are treated carefully & fed a certain way to prevent these diseases. Some human diseases are not even known to humans yet & you would have to bring hospital & science lab equipments just to check on these "meat".

If we're talking about a cleansing all together now, then the sick would be picked out as a natural selection.
And if it were selling live-stock so to speak, then the sick would be put down and the healthy ones would be brought to slaughter so that the ones that are not in the cattle group can eat them.
